Chili’s Bar & Grill1526 Military Road

CRITICAL VIOLATIONS: Eight packages of beef and one package of turkey found in cold hold at grill site between 50 and 65 degrees, packages were stacked in cold hold above chill line, cook voluntarily discarded.

NON-CRITICAL VIOLATIONS: Storage area for styrofoam containers has boxes on floor and non-food service items mixed with food service items; two hand-wash stations in kitchen area had no soap.

NON-CRITICAL VIOLATIONS: Food boxes stored on floor of walk-in freezer, moved and corrected; frost buildup in upright freezer in rear of kitchen and in small freezer in refrigerator in front of store.

NON-CRITICAL VIOLATIONS: Thermometers missing from refrigerators in rear store room; low temperature auto dishwasher not injecting soap and bleach, wash manually until fixed.

CRITICAL VIOLATIONS: One carton of raw eggs and one container of raw chicken stored above ready-to-eat items in cooler, worker voluntarily moved raw items to bottow shelf.

NON-CRITICAL VIOLATIONS: Single-service containers not stored properly in dispenser, (stored upright and out of wrapper in kitchen), corrected; proper sanitizer solution not prepared for storage of wipe cloths, corrected; thermometer missing from prep cooler on front line, corrected.

CRITICAL VIOLATIONS: Using inspector’s calibrated food-testing thermometer, temped raw chicken wings (53 degrees), raw sliced beef (60 degrees) and ground beef (54 degrees) in “true” cooler by line, in speaking with owner, the above raw meats had been in there for more than two hours, owner voluntarily discarded meat, corrected; using inspector’s calibrated dial thermometer, temped true cooler on hot line to be at 55 degrees ambient, potentially hazardous foods were moved to walk-in, owner turned cooler down and moved away from wall, cooler was at 45 degrees at end of inspection, corrected.

NON-CRITICAL VIOLATIONS: None.

NON-CRITICAL VIOLATIONS: Coffee cups and lids not stored properly in dispenser behind waitress station; styrofoam containers stored uncovered throughout kitchen; ice cream scoop stored with handle in drip well behind waitress station; multiple cutting boards show discoloration and deep grooves; faucet at three-bay sink leaks; fans in walk-in freezer and cooler have dust buildup. ice buildup on floor of walk-in freezer, condenser leaking.

NON-CRITICAL VIOLATIONS: Newspaper found on beer cooler shelving behind bar; chemical dishwater not sanitizing, technician called; hand-wash sink in men’s restroom has no running cold water.

CRITICAL VIOLATIONS: None.

NON-CRITICAL VIOLATIONS: Pizza boxes stored on floor in dry storage area; cutting board on sub unit has deep cuts and is not smooth and easily cleanable; shelf across from three-bay sink is lined with cardboard, shelf underneath is bare wood and not smooth and easily cleanable; three-bay sink is leaking, water on floor; floor in back hallway and walk-in cooler is not easily cleanable; ceiling in kitchen is dark and in need of painting.

CRITICAL VIOLATIONS: None.

NON-CRITICAL VIOLATIONS: Several No. 10 cans of beans stored on kitchen floor were voluntarily moved to kitchen storage shelving, corrected; faucet for three-bay sink leaking, operator reported plumber had been called and was to fix later in day; walk-in cooler fan cover dusty, repeat violation.
