• CRITICAL VIOLATIONS: Chopped broccoli in bowl on prep counter temped at 59 degrees, had been out for nearly an hour, operator voluntarily placed item in line cooler.

• NON-CRITICAL VIOLATIONS: In-use kitchen knives stored in gap between prep counter and walk-in cooler wall so that blades may contact wall and other unsanitized surfaces, knives washed, sanitized and placed in proper rack; scoop in rice cooker lacks handle, scoop removed and proper scoop located.
